1 chicken breast-cut into 1” pieces
2 tbsp olive oil
2 cups chicken stock
1 tbsp brown sugar
3 tsp red curry paste
1 cup brown rice
1 can coconut milk
2 kaffir lime leaves
1 yam or sweet potato-cut into 1” pieces
2 potatoes-cut into pieces
3 cups green and or yellow beans
2 tsp lime juice
1/3 cup chopped cilantro
Heat oil in frying pan and brown the chicken. Remove chicken from pan and set aside. Pour chicken stock into pan and bring to a boil. Stir in curry paste, brown sugar and rice. Reduce heat and simmer for 10 minutes.
Stir in coconut milk and lime leaves, then browned chicken, yam and potato. Cook for 25 minutes, stirring occasionally. Add beans, lime juice and cilantro and cook for an additional 10 minutes.
Makes 6 generous servings.
